Preheat oven to 400.
Start by lightly greasing a 10- or 12-inch oven safe skillet, preferably cast iron. If not available use a pie pan.
Make a crust by filling the bottom of the pan with stuffing. Compress the stuffing a bit ont he bottom and sides of the pan.
Next put in some leftover turkey and veggies.
Beat 6 eggs (8 for a 12 inch skillet) with a little milk. Add seasoning of choice, such as salt, pepper, basil, etc. Shredded cheese optional. And/or Parmesan. Pour egg mix into the pan.
Bake for 15-20 minutes or until the egg mixture is set.
Serve with a side of mashed potatoes and gravy, and a biscuit if desired. Eat then nap.
