Exactly how I do it except I normally go 225 the whole time in my UDS.3 hrs smoked - 250
2 hrs wrapped in butter, honey, brown sugar and a little apple juice - 230
45 minutes unwrapped - 230
10 minutes with sauce to get the glaze - 230

I will smoke burgers without the reverse sear and they are great and super low maintenance. Get them going, wait til they hit temp and serve. Great for a crowd.Enjoying using the smoker more often her in Houston
